Ingredients
  

  • 2 ripe avocados
  • 1/2 cup cherry tomatoes diced
  • 1/2 cup fresh mozzarella diced
  • 2 tbsp fresh basil chopped
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp balsamic vinegar optional

Instructions
 

  • Halve avocados and remove the pit. Scoop out some flesh to make room for the filling.
  • In a bowl, mix tomatoes, mozzarella, and basil. Drizzle with olive oil, season with salt and pepper, and toss gently.
  • Fill each avocado half with the Caprese mixture.
