- 1 medium cauliflower head
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/4 cup almond flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon baking powder
- Salt and pepper to taste
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Chop the cauliflower into florets and pulse in a food processor until finely riced.
Wring out the cauliflower to remove excess moisture.
In a large bowl, mix together the cauliflower, eggs, mozzarella cheese, almond flour, garlic powder, baking powder, salt, and pepper.
Shape the dough into a loaf or several rolls and place it on the prepared baking sheet.
