- Cauliflower – 1 medium head
- Celeriac – 1 medium
- Onion – 1 medium
- Garlic – 2 cloves
- Vegetable or chicken broth – 4 cups
- Heavy cream – 1/2 cup
- Olive oil or butter – 2 tbsp
Chop the cauliflower and celeriac into florets and cubes, respectively. Dice the onion and garlic.
In a large pot, sauté the onion and garlic in olive oil or butter for about 5 minutes.
Add the cauliflower and celeriac to the pot and stir.
Pour in the broth and bring to a simmer. Cook for 15-20 minutes until tender.
Use an immersion blender to blend the soup until smooth.
Stir in the heavy cream and season with salt and pepper.
