Ingredients
  

  • Cauliflower – 1 medium head
  • Celeriac – 1 medium
  • Onion – 1 medium
  • Garlic – 2 cloves
  • Vegetable or chicken broth – 4 cups
  • Heavy cream – 1/2 cup
  • Olive oil or butter – 2 tbsp

Instructions
 

  • Chop the cauliflower and celeriac into florets and cubes, respectively. Dice the onion and garlic.
  • In a large pot, sauté the onion and garlic in olive oil or butter for about 5 minutes.
  • Add the cauliflower and celeriac to the pot and stir.
  • Pour in the broth and bring to a simmer. Cook for 15-20 minutes until tender.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in the heavy cream and season with salt and pepper.
  • Serve warm and enjoy!
