- 2 cups almond flour
- 1 1/2 cups shredded cheddar cheese
- 2 large eggs
- 1/4 cup unsalted butter (melted)
- 1 tsp baking powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
For the garlic butter topping:
- 2 tbsp butter (melted)
- 2 cloves garlic minced
- 1 tbsp fresh parsley (chopped)
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper
In a large mixing bowl, combine: 2 cups almond flour, 1 ½ cups shredded cheddar cheese, 1 teaspoon baking powder, ½ teaspoon garlic powder and ¼ teaspoon salt
Add 2 beaten eggs and ¼ cup melted butter to the dry ingredients and mix until the dough comes together.
Scoop the dough into 8 small biscuit-sized portions and place them on the prepared baking sheet.
Bake for 15-18 minutes, or until golden brown and cooked through.
While the biscuits bake, prepare the garlic butter topping by mixing 2 tablespoons melted butter, 2 minced garlic cloves, and 1 tablespoon chopped parsley.
Brush the warm biscuits with the garlic butter topping and serve immediately.
