- Ground Beef – 1 lb
- Low-Carb Tortillas – 4
- Shredded Cheddar Cheese – 1 cup
- Pickles – 1/4 cup
- Mustard – 1 tbsp
- Sugar-Free Ketchup – 1 tbsp
- Onion – 1 small
- Butter or Oil – 1 tbsp
Cook the ground beef in a large skillet over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
Season the beef with salt, pepper, and spices. Add the chopped onions and cook for 2-3 minutes until soft.
Place one tortilla in the skillet and sprinkle cheese on top. Add the beef mixture, pickles, mustard, and ketchup.
Add more cheese, then top with another tortilla.
Flip the quesadilla carefully and cook until both sides are golden brown and crispy.
Remove from the skillet, slice into wedges, and serve immediately.
