  • 2 medium zucchinis
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Slice zucchinis lengthwise into 1/2-inch thick steaks.
  • Arrange zucchini on the sheet, drizzle with oil, and top with garlic, salt, and pepper.
  • Roast for 15–18 minutes until just tender.
  • Remove, top with cheeses, and broil for 2–3 minutes until golden and bubbly.
