Ingredients
  

  • 2 cups shredded zucchini
  • 1 cup shredded mozzarella
  • ½ cup grated parmesan
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • Salt & pepper

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate zucchini and squeeze out excess moisture using a kitchen towel.
  • In a bowl, mix zucchini, mozzarella, Parmesan, almond flour, egg, garlic powder, Italian seasoning, salt, and pepper.
  • Spread mixture onto the baking sheet, shaping it into a ¼–½ inch thick rectangle.
  • Bake for 20–25 minutes until edges are golden.
  • Sprinkle extra mozzarella on top and bake for 5–7 minutes until melted and bubbly.
  • Let cool slightly, then slice into breadsticks.
  • For extra crispiness, broil for 1–2 minutes if desired.
  • Serve warm with low-carb marinara or your favorite dip. Enjoy! 😊
