- 1/4 cup butter, softened
- 1/2 cup powdered sweetener
- 1 egg
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the softened butter and powdered sweetener in a mixing bowl until light and fluffy. Add the egg, lemon juice, lemon zest, and vanilla extract, then mix until smooth.
