Ingredients
  

  • Chicken Breasts 2 lbs
  • Cherry Tomatoes 1 cup
  • Fresh Mozzarella 2 cups
  • Basil Leaves 1/4 cup
  • Olive Oil 2 tbsp
  • Garlic 3 cloves, minced
  • Salt and Pepper
  • Parmesan Cheese 1/4 cup

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, toss chicken with olive oil, garlic, salt, and pepper.
  • Spread chicken in a baking dish and top with halved tomatoes.
  • Tear mozzarella into pieces and scatter over the top.
  • Sprinkle Parmesan cheese over the mozzarella.
  • Cover the dish with foil and bake for 25 minutes.
  • Remove the foil, broil for 10 minutes until cheese is bubbly and golden.
  • Garnish with fresh basil before serving.
