- 4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 8 oz cream cheese
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 baking dish with olive oil or cooking spray.
Heat a skillet over medium heat and add olive oil. Season the chicken breasts with salt and pepper on both sides. Cook the chicken in the skillet for 6-7 minutes per side until fully cooked. Remove the chicken, let it cool slightly, and cut it into bite-sized pieces.
In the same skillet, add the fresh spinach. Sauté for 2-3 minutes, stirring frequently, until wilted. Remove from heat and set aside.
In a large mixing bowl, combine the cream cheese, heavy cream, minced garlic, shredded mozzarella, and grated parmesan cheese. Stir the mixture until it is smooth and well-blended. Taste the sauce and add salt and pepper as needed.
Place the diced chicken in an even layer at the bottom of the greased baking dish. Spread the sautéed spinach evenly over the chicken. Pour the creamy sauce over the chicken and spinach layers. Use a spatula to spread it evenly and ensure everything is coated.
Transfer the baking dish to the oven and bake for 20-25 minutes. The casserole is done when the top is golden and bubbling.
Remove the dish from the oven and allow it to cool for 5 minutes. Slice into portions and serve warm. Enjoy!
