- Chicken breast or thighs – 1 lb
- Coconut milk – 1 can (14 oz)
- Ground almonds or almond flour – 2 tbsp
- Garlic – 2 cloves
- Onion – 1 medium
- Cumin – 1 tsp
- Coriander – 1 tsp
- Turmeric – ½ tsp
- Garam masala – 1 tsp
- Paprika – 1 tsp
- Salt and pepper – to taste
Heat a large skillet over medium heat and add oil.
Cook the chicken until golden brown on both sides. Remove and set aside.
In the same skillet, sauté chopped onions and garlic until softened.
Add the spices and cook for 1 minute.
Pour in the coconut milk and stir to combine.
Add ground almonds or almond flour to thicken the sauce.
Return the chicken to the skillet and simmer until cooked through.
Adjust the seasoning with salt and pepper.
Serve hot with cauliflower rice or zucchini noodles.
