Ingredients
  

  • Chicken breast or thighs – 1 lb
  • Coconut milk – 1 can (14 oz)
  • Ground almonds or almond flour – 2 tbsp
  • Garlic – 2 cloves
  • Onion – 1 medium
  • Cumin – 1 tsp
  • Coriander – 1 tsp
  • Turmeric – ½ tsp
  • Garam masala – 1 tsp
  • Paprika – 1 tsp
  • Salt and pepper – to taste

Instructions
 

  • Heat a large skillet over medium heat and add oil.
  • Cook the chicken until golden brown on both sides. Remove and set aside.
  • In the same skillet, sauté chopped onions and garlic until softened.
  • Add the spices and cook for 1 minute.
  • Pour in the coconut milk and stir to combine.
  • Add ground almonds or almond flour to thicken the sauce.
  • Return the chicken to the skillet and simmer until cooked through.
  • Adjust the seasoning with salt and pepper.
  • Serve hot with cauliflower rice or zucchini noodles.
