- 1 lb ground chicken
- 1 large egg
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- ¼ cup almond flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp sugar-free ketchup
Preheat the oven to 375°F (190°C) and lightly grease a muffin tin.
In a large bowl, combine ground chicken, almond flour, grated parmesan, egg, finely chopped onion, minced garlic, salt, pepper, and Italian seasoning. Mix until well incorporated.
Divide the mixture evenly into the muffin tin, pressing gently to shape each portion into a cup.
Bake for 20-25 minutes, or until the tops are golden brown and the internal temperature reaches 165°F (75°C).
Optional: In the last 5 minutes of baking, add a spoonful of sugar-free ketchup or shredded cheese on top of each meatloaf cup for extra flavor.
Remove from the oven and let them cool in the muffin tin for a few minutes before transferring to a plate.
