Ingredients
  

  • 2 chicken breasts
  • 4 cups chicken broth
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 2 garlic cloves minced
  • 1 tsp thyme
  • 1 tsp parsley
  • Salt & pepper to taste
  • 1 pack shirataki noodles
  • 1 tbsp olive oil or butter optional

Instructions
 

  • Add chicken, chopped onion, celery, garlic, and herbs to your crockpot.
  • Pour in the chicken broth and season with salt and pepper.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours.
  • Shred the chicken with two forks, then return it to the pot.
  • Stir in rinsed shirataki noodles.
  • Cook for an additional 20–30 minutes.
  • Taste, adjust seasoning, and serve hot.
