Ingredients
  

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsalted butter
  • 1/3 cup granulated erythritol or monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar-free chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, letting it hang over the sides for easy removal.
  • In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt until well combined.
  • In another bowl, mix the melted butter, sweetener, egg, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. Fold in the chocolate chips.
  • Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  • Bake for 18-22 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean. Avoid over-baking for a soft and chewy texture.
  • Let the bars cool in the pan for at least 15 minutes. Lift them out using the parchment paper and slice into squares.
