- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup unsalted butter
- 1/3 cup granulated erythritol or monk fruit sweetener
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar-free chocolate chips
Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, letting it hang over the sides for easy removal.
In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt until well combined.
In another bowl, mix the melted butter, sweetener, egg, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. Fold in the chocolate chips.
Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
Bake for 18-22 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean. Avoid over-baking for a soft and chewy texture.
Let the bars cool in the pan for at least 15 minutes. Lift them out using the parchment paper and slice into squares.
