Ingredients
  

  • 200 g dark chocolate 70% cocoa or higher
  • 1/2 cup almonds chopped
  • 2 tbsp coconut oil
  • 1/4 cup sugar-free sweetener
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Cocoa powder for coating

Instructions
 

  • Break the dark chocolate into small chunks and melt it in a microwave-safe bowl or over a double boiler.
  • Stir in the coconut oil and sweetener until smooth and fully combined.
  • Add the chopped almonds and mix well.
  • Stir in vanilla extract and sea salt.
  • Lay out a sheet of parchment paper or plastic wrap, and pour the chocolate mixture onto it.
  • Roll it into a log shape, pressing down slightly as you go.
  • Twist the ends and refrigerate for at least 2 hours to firm up.
  • Roll the chilled log in unsweetened cocoa powder until fully coated.
  • Slice into rounds and serve!
