- 200 g dark chocolate 70% cocoa or higher
- 1/2 cup almonds chopped
- 2 tbsp coconut oil
- 1/4 cup sugar-free sweetener
- 1 tsp vanilla extract
- Pinch of sea salt
- Cocoa powder for coating
Break the dark chocolate into small chunks and melt it in a microwave-safe bowl or over a double boiler.
Stir in the coconut oil and sweetener until smooth and fully combined.
Add the chopped almonds and mix well.
Stir in vanilla extract and sea salt.
Lay out a sheet of parchment paper or plastic wrap, and pour the chocolate mixture onto it.
Roll it into a log shape, pressing down slightly as you go.
Twist the ends and refrigerate for at least 2 hours to firm up.
Roll the chilled log in unsweetened cocoa powder until fully coated.
Slice into rounds and serve!
