- 1/2 cup shredded mozzarella
- 1 large egg
- 2 tbsp almond flour
- 1/2 tsp ground cinnamon
- 1 tbsp powdered erythritol plus more for coating
- 1/2 tsp vanilla extract
- Additional cinnamon and powdered sweetener for coating
Preheat your mini waffle maker.
In a small bowl, whisk together the egg, shredded mozzarella, almond flour, 1/2 tsp cinnamon, 1 tbsp powdered erythritol, and vanilla extract until combined.
Lightly grease the waffle maker and pour in half of the batter. Close and cook for 3-4 minutes, or until golden and crispy. Repeat with the remaining batter.
In a shallow dish, mix additional cinnamon and powdered sweetener. Dip each chaffle in the mixture to coat or sprinkle on top.
