  • 1 Mini Waffle Maker
  • 1 Mixing bowl
  • 1 Shallow Dish

Ingredients
  

  • 1/2 cup shredded mozzarella
  • 1 large egg
  • 2 tbsp almond flour
  • 1/2 tsp ground cinnamon
  • 1 tbsp powdered erythritol plus more for coating
  • 1/2 tsp vanilla extract
  • Additional cinnamon and powdered sweetener for coating

Instructions
 

  • Preheat your mini waffle maker.
  • In a small bowl, whisk together the egg, shredded mozzarella, almond flour, 1/2 tsp cinnamon, 1 tbsp powdered erythritol, and vanilla extract until combined.
  • Lightly grease the waffle maker and pour in half of the batter. Close and cook for 3-4 minutes, or until golden and crispy. Repeat with the remaining batter.
  • In a shallow dish, mix additional cinnamon and powdered sweetener. Dip each chaffle in the mixture to coat or sprinkle on top.
