- 1 cup almond flour
- 2 tbsp coconut flour
- ¼ cup erythritol
- 2 large eggs
- 3 tbsp melted butter
- 2 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon
- 2 tbsp melted butter for coating
- 2 tbsp erythritol + ½ tsp cinnamon for coating
Preheat oven to 350°F and grease your donut hole or mini muffin pan.
Mix almond flour, coconut flour, erythritol, baking powder, and cinnamon.
In a separate bowl, whisk eggs, melted butter, and vanilla.
Combine wet and dry ingredients to form a batter. Let sit 1–2 minutes.
Divide batter into prepared pan and bake for 15–18 minutes.
Let cool slightly. Dip each in melted butter, then cinnamon “sugar” mix.
