Ingredients
  

  • Chicken Tenders: 1 lb
  • Shredded Coconut: 1 cup
  • Almond Flour: 1/4 cup
  • Eggs: 2 large
  • Garlic Powder: 1 tsp
  • Salt and Pepper: To taste
  • Olive Oil Spray: As needed

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the shredded coconut, almond flour, garlic powder, salt, and pepper.
  • In another bowl, beat the eggs until smooth.
  • Dip each chicken tender into the egg wash, ensuring it's fully coated.
  • Transfer the chicken to the coconut mixture and press the coconut onto the chicken to coat well.
  • Place the coated tenders on the prepared baking sheet, spaced apart.
