Ingredients
  

  • Cottage cheese — ½ cup
  • Eggs — 2 large
  • Almond flour — ⅓ cup
  • Unsweetened cocoa powder — ¼ cup
  • Powdered erythritol — ¼ cup or to taste
  • Melted butter or coconut oil — 2 tbsp
  • Vanilla extract — ½ tsp
  • Baking powder — ¼ tsp
  • Salt — pinch
  • Optional Sugar-free chocolate chips — 2 tbsp

Instructions
 

  • Preheat oven to 350°F (175°C) and line a mini muffin pan with silicone or paper liners, or lightly grease each cup.
  • Blend the cottage cheese in a blender or food processor until smooth and creamy with no lumps remaining.
  • Add eggs, sweetener, melted butter, and vanilla to the blended cottage cheese. Blend again until fully combined.
  • In a mixing bowl, whisk together almond flour, cocoa powder, baking powder, and a pinch of salt until evenly mixed.
  • Pour the blended wet mixture into the dry ingredients and stir until a smooth batter forms. Fold in chocolate chips if using.
  • Spoon the batter into the mini muffin cups, filling each one about three-fourths full.
  • Bake for 12–15 minutes (or 18–20 minutes for regular-size muffins) until the tops are set and a toothpick comes out with moist crumbs.
  • Allow the brownie bites to cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling. Serve warm or chilled.
