Ingredients
  

  • ½ cup cottage cheese
  • 2 large eggs
  • ¼ cup sweetener
  • 2 tbsp butter or coconut oil
  • ¼ cup cocoa powder
  • ¾ cup almond flour
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • Pinch of salt
  • Optional: 2 tbsp sugar-free chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line a mini muffin pan.
  • Blend cottage cheese until smooth.
  • Add eggs, sweetener, butter, and vanilla; blend again.
  • In another bowl, mix almond flour, cocoa powder, baking powder, and salt.
  • Stir wet ingredients into dry until combined. Fold in chocolate chips if using.
  • Spoon into muffin cups, ¾ full.
  • Bake 12–15 mins until set. Cool before serving.
