Preheat your oven to 375°F (190°C) so it’s fully heated before the pizza bites go in. Line a baking sheet with parchment paper to prevent sticking and make cleanup easier. The parchment also helps the bottoms of the bites cook evenly and develop a light golden crust.
In a medium mixing bowl, add the cottage cheese, egg, almond flour, garlic powder, Italian seasoning, and a pinch of salt. Stir everything together using a spoon or spatula until the mixture becomes evenly combined. The batter may look slightly lumpy because of the cottage cheese, and that’s completely normal—it will smooth out as the cheese melts during baking.
Add the shredded mozzarella cheese to the bowl and gently fold it into the mixture. Stir just until the cheese is distributed throughout the batter. The mixture should now look thick, cheesy, and scoopable. If it feels too loose, you can sprinkle in a small amount of extra almond flour to help firm it up.
Using a spoon or small cookie scoop, drop portions of the batter onto the prepared baking sheet. Space them a little apart so they have room to spread slightly while baking. Try to keep the portions roughly the same size so they cook evenly.
Spoon a small amount of sugar-free pizza sauce onto the top of each portion, then add your chosen toppings such as turkey pepperoni, chopped vegetables, or extra cheese. Keep the toppings light so the bites hold their shape and bake properly.
Place the baking sheet in the oven and bake for 15–18 minutes, or until the tops are golden and the cheese is melted and slightly bubbly. Once done, remove the tray from the oven and let the pizza bites cool for a few minutes before serving. This brief cooling time helps them firm up and makes them easier to lift from the baking sheet.
