Ingredients
  

  • 4 large eggs separated
  • ¾ cup cottage cheese
  • ¼ cup almond flour
  • 2 tbsp coconut flour
  • 2 tbsp powdered erythritol
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C); grease or line muffin tin.
  • Separate eggs into yolks and whites.
  • Beat whites until stiff peaks form.
  • Mix yolks with cottage cheese, sweetener, vanilla, and salt.
  • In another bowl, combine almond flour, coconut flour, and baking powder.
  • Stir dry mix into yolk mixture until smooth.
  • Gently fold in egg whites in 2–3 batches.
  • Fill muffin cups ¾ full, swirl extra cottage cheese on top if desired.
  • Bake 18–22 mins or until golden brown and firm.
  • Cool, serve, and enjoy!
