- 2 cups almond flour
- 1/2 cup shredded unsweetened coconut
- 1 tsp baking powder
- 1/2 cup butter or coconut oil, melted
- 1/4 cup erythritol or sweetener of choice
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sugar-free chocolate chips
- 1/4 cup chopped nuts (optional)
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, mix together almond flour, coconut, baking powder, and salt.
In a large bowl, beat butter (or coconut oil) and sweetener until creamy. Add eggs and vanilla, mixing until combined.
Add dry ingredients to wet mixture and stir in chocolate chips and nuts.
Scoop dough into tablespoon-sized balls, flatten slightly, and place on the baking sheet.
Bake for 12-15 minutes or until edges are golden brown.
Let cool for a few minutes before transferring to a wire rack to cool completely.
