Ingredients
  

  • 2 cups almond flour
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp baking powder
  • 1/2 cup butter or coconut oil, melted
  • 1/4 cup erythritol or sweetener of choice
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup chopped nuts (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix together almond flour, coconut, baking powder, and salt.
  • In a large bowl, beat butter (or coconut oil) and sweetener until creamy. Add eggs and vanilla, mixing until combined.
  • Add dry ingredients to wet mixture and stir in chocolate chips and nuts.
  • Scoop dough into tablespoon-sized balls, flatten slightly, and place on the baking sheet.
  • Bake for 12-15 minutes or until edges are golden brown.
  • Let cool for a few minutes before transferring to a wire rack to cool completely.
