Ingredients
  

  • Ground beef – 2 lbs
  • Crushed pork rinds – ½ cup
  • Eggs – 2 large
  • Onion – ½ small finely chopped
  • Garlic – 2 cloves minced
  • Shredded cheddar cheese – ½ cup
  • Sugar-free ketchup – ¼ cup
  • Worcestershire sauce – 1 tbsp
  • Salt – 1 tsp
  • Black pepper – ½ tsp

Glaze:

  • Sugar-free ketchup – ¼ cup
  • Brown sugar substitute – 1 tbsp
  • Apple cider vinegar – 1 tsp

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with foil.
  • In a large bowl, combine ground beef, crushed pork rinds, eggs, chopped onion, garlic, shredded cheese, sugar-free ketchup, Worcestershire sauce, salt, and pepper. Mix well but don’t overwork.
  • Shape the mixture into a loaf and place it in a loaf pan or on a baking sheet.
  • Bake for 40 minutes.
  • While it bakes, prepare the glaze by mixing sugar-free ketchup, brown sugar substitute, and apple cider vinegar in a saucepan over low heat until smooth.
  • After 40 minutes, remove meatloaf from oven and brush glaze on top.
  • Return to oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.
