- Ground beef – 2 lbs
- Crushed pork rinds – ½ cup
- Eggs – 2 large
- Onion – ½ small finely chopped
- Garlic – 2 cloves minced
- Shredded cheddar cheese – ½ cup
- Sugar-free ketchup – ¼ cup
- Worcestershire sauce – 1 tbsp
- Salt – 1 tsp
- Black pepper – ½ tsp
Glaze:
- Sugar-free ketchup – ¼ cup
- Brown sugar substitute – 1 tbsp
- Apple cider vinegar – 1 tsp
Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with foil.
In a large bowl, combine ground beef, crushed pork rinds, eggs, chopped onion, garlic, shredded cheese, sugar-free ketchup, Worcestershire sauce, salt, and pepper. Mix well but don’t overwork.
Shape the mixture into a loaf and place it in a loaf pan or on a baking sheet.
Bake for 40 minutes.
While it bakes, prepare the glaze by mixing sugar-free ketchup, brown sugar substitute, and apple cider vinegar in a saucepan over low heat until smooth.
After 40 minutes, remove meatloaf from oven and brush glaze on top.
Return to oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
