Ingredients
  

  • Almond flour: 2 cups
  • Coconut flour: 1/4 cup
  • Baking powder: 1 1/2 tsp
  • Eggs: 3 large
  • Butter: 1/2 cup
  • Erythritol: 1/2 cup
  • Cranberries: 1 cup
  • Orange zest: 1 tbsp
  • Orange juice: 2 tbsp

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease or line a loaf pan.
  • In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  • In a separate bowl, beat the eggs and melted butter. Add orange zest, orange juice, and erythritol.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the cranberries.
  • Pour the batter into the loaf pan and smooth the top.
  • Bake for 40-45 minutes or until a toothpick inserted comes out clean.
  • Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
