- Almond flour: 2 cups
- Coconut flour: 1/4 cup
- Baking powder: 1 1/2 tsp
- Eggs: 3 large
- Butter: 1/2 cup
- Erythritol: 1/2 cup
- Cranberries: 1 cup
- Orange zest: 1 tbsp
- Orange juice: 2 tbsp
Preheat the oven to 350°F (175°C) and grease or line a loaf pan.
In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
In a separate bowl, beat the eggs and melted butter. Add orange zest, orange juice, and erythritol.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Gently fold in the cranberries.
Pour the batter into the loaf pan and smooth the top.
Bake for 40-45 minutes or until a toothpick inserted comes out clean.
Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
