Ingredients
  

  • Almond Flour – 2 cups
  • Butter – 1/2 cup, softened
  • Monk Fruit Sweetener – 1/4 cup
  • Egg – 1
  • Orange Zest – 1 tbsp
  • Cinnamon – 1 tsp
  • Cranberries – 1/2 cup, dried, unsweetened
  • Baking Powder – 1/2 tsp
  • Salt – 1/4 tsp

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix together almond flour, cinnamon, baking powder, and salt in a bowl.
  • Cream together softened butter and monk fruit sweetener until fluffy
  • Add egg and orange zest to the butter mixture, mixing well.
  • Gradually add dry ingredients and mix to form a dough.
  • Fold in cranberries.
  • Scoop dough onto the baking sheet and flatten slightly.
  • Bake for 10-12 minutes, until golden.
  • Cool on a wire rack.
