- Almond Flour – 2 cups
- Butter – 1/2 cup, softened
- Monk Fruit Sweetener – 1/4 cup
- Egg – 1
- Orange Zest – 1 tbsp
- Cinnamon – 1 tsp
- Cranberries – 1/2 cup, dried, unsweetened
- Baking Powder – 1/2 tsp
- Salt – 1/4 tsp
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix together almond flour, cinnamon, baking powder, and salt in a bowl.
Cream together softened butter and monk fruit sweetener until fluffy
Add egg and orange zest to the butter mixture, mixing well.
Gradually add dry ingredients and mix to form a dough.
Fold in cranberries.
Scoop dough onto the baking sheet and flatten slightly.
Bake for 10-12 minutes, until golden.
Cool on a wire rack.
