Ingredients
  

  • Chicken thighs – 500g
  • Butter – 3 tbsp
  • Coconut cream – 1/2 cup
  • Tomato paste – 3 tbsp
  • Onion – 1 medium
  • Garlic – 4 cloves
  • Ginger – 1-inch piece
  • Garam masala – 1 tsp
  • Ground cumin – 1 tsp
  • Ground coriander – 1 tsp
  • Paprika – 1 tsp
  • Chili powder – 1/2 tsp
  • Salt & black pepper – to taste
  • Fresh cilantro – garnish

Instructions
 

  • Pat chicken dry and season with salt & pepper.
  • Sear chicken in butter until golden; remove.
  • Sauté onion, garlic, ginger until fragrant.
  • Add spices, stir 30–60 seconds.
  • Mix in tomato paste and coconut cream; simmer.
  • Return chicken, simmer 10–15 mins.
  • Blend sauce optionally for creaminess.
  • Garnish with cilantro; serve hot.
