- Chicken thighs – 500g
- Butter – 3 tbsp
- Coconut cream – 1/2 cup
- Tomato paste – 3 tbsp
- Onion – 1 medium
- Garlic – 4 cloves
- Ginger – 1-inch piece
- Garam masala – 1 tsp
- Ground cumin – 1 tsp
- Ground coriander – 1 tsp
- Paprika – 1 tsp
- Chili powder – 1/2 tsp
- Salt & black pepper – to taste
- Fresh cilantro – garnish
Pat chicken dry and season with salt & pepper.
Sear chicken in butter until golden; remove.
Sauté onion, garlic, ginger until fragrant.
Add spices, stir 30–60 seconds.
Mix in tomato paste and coconut cream; simmer.
Return chicken, simmer 10–15 mins.
