Ingredients
  

  • 2 large English cucumbers
  • 8 ounces full-fat cream cheese softened
  • 1 small garlic clove finely minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh chives chopped
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon fine salt
  • ¼ teaspoon smoked paprika
  • 1 teaspoon extra-virgin olive oil
  • 1 tablespoon fresh parsley chopped, for garnish

  • Wash and thoroughly dry the two English cucumbers. Trim both ends, then slice the cucumbers into approximately ¼-inch rounds. Keep the slices reasonably uniform so they are sturdy enough to hold the cream cheese topping.
  • Place the cucumber slices on a plate or clean work surface lined with paper towels. Gently pat the tops of the slices dry to remove excess moisture. Do not heavily salt the cucumbers because this can draw out additional water.
  • Add the softened cream cheese to a small mixing bowl. Make sure the cream cheese is soft enough to stir easily so the finished mixture becomes smooth rather than lumpy.
  • Add the minced garlic, fresh lemon juice, chopped dill, chopped chives, black pepper, salt, smoked paprika, and olive oil to the cream cheese.
  • Stir everything together thoroughly until the herbs and seasonings are evenly distributed throughout the cream cheese. Taste the mixture and adjust the seasoning if desired, adding a little more lemon, dill, garlic, or black pepper according to your preference.
  • Arrange the cucumber slices in a single layer on a serving platter. Leave a small amount of space between the slices so they are easy to pick up and the platter looks neat.
  • Spoon approximately 1 teaspoon of the seasoned cream cheese mixture onto each cucumber slice. Spread it gently over the center of each slice while leaving a small green border around the edges.
  • Sprinkle the finished cucumber bites with chopped fresh parsley, additional dill, or finely sliced chives. Add a tiny pinch of smoked paprika to each piece if you want extra color and flavor.
  • Refrigerate the assembled cucumber slices for 10–15 minutes if desired. This brief chilling time helps the cream cheese firm slightly and makes the bites especially refreshing.
  • Serve the cucumber slices chilled or lightly chilled. For the best texture, enjoy them shortly after assembling rather than allowing them to sit for several hours.
