- Chicken Thighs – 500g
- Coconut Milk – 1 can
- Onion – 1
- Garlic – 4 cloves
- Ginger – 1 tbsp
- Tomato Paste – 2 tbsp
- Curry Powder – 2 tbsp
- Turmeric – 1 tsp
- Cayenne Pepper – Optional
- Vegetables – as desired
Heat coconut oil and sauté onions until translucent.
Add garlic, ginger, and spices; stir until fragrant.
Mix in tomato paste and caramelize slightly.
