Ingredients
  

  • Chicken Thighs – 500g
  • Coconut Milk – 1 can
  • Onion – 1
  • Garlic – 4 cloves
  • Ginger – 1 tbsp
  • Tomato Paste – 2 tbsp
  • Curry Powder – 2 tbsp
  • Turmeric – 1 tsp
  • Cayenne Pepper – Optional
  • Vegetables – as desired

Instructions
 

  • Heat coconut oil and sauté onions until translucent.
  • Add garlic, ginger, and spices; stir until fragrant.
  • Mix in tomato paste and caramelize slightly.
  • Add chicken and coat with spices, cooking for 5 minutes.
  • Pour in coconut milk, simmer, and add vegetables.
  • Cook until chicken is tender and sauce thickens.
  • Adjust seasoning and garnish with cilantro.
