Add the cottage cheese to a blender or food processor and blend until completely smooth. This step is important for achieving a soft, uniform texture in the final bread without any graininess.
Pour the blended cottage cheese into a large mixing bowl. Add the eggs and oil, then mix everything together using a whisk or spoon until the mixture is fully combined and smooth.
Once the wet ingredients are well mixed, add the almond flour, baking powder, and salt to the bowl. Stir gently but thoroughly until a thick, smooth batter forms with no dry pockets remaining.
Continue mixing just until everything is combined—avoid overmixing, as this can affect the softness of the bread.
Pour the batter into your prepared loaf pan, making sure to scrape out all of the mixture from the bowl so nothing goes to waste.
Use a spatula to spread the batter evenly across the pan, smoothing the top so it bakes uniformly and looks neat.
Place the loaf pan into the preheated oven and bake for 35–40 minutes. The top should turn golden brown, and the bread should feel firm when gently pressed.
To check if it’s done, insert a toothpick into the center—if it comes out clean or with just a few crumbs, the bread is ready.
Remove the bread from the oven and allow it to cool in the pan for about 10–15 minutes. This resting time helps it set properly and makes slicing easier.
