  • Eggs – 3
  • Almond flour – 1½ cups
  • Baking powder – 1 tsp

  • Preheat your oven to 180°C (350°F) and lightly grease a loaf pan with butter or oil. This helps prevent sticking and ensures the bread releases easily after baking.
  • Add the cottage cheese to a blender or food processor and blend until completely smooth. This step is important for achieving a soft, uniform texture in the final bread without any graininess.
  • Pour the blended cottage cheese into a large mixing bowl. Add the eggs and oil, then mix everything together using a whisk or spoon until the mixture is fully combined and smooth.
  • Once the wet ingredients are well mixed, add the almond flour, baking powder, and salt to the bowl. Stir gently but thoroughly until a thick, smooth batter forms with no dry pockets remaining.
  • Continue mixing just until everything is combined—avoid overmixing, as this can affect the softness of the bread.
  • Pour the batter into your prepared loaf pan, making sure to scrape out all of the mixture from the bowl so nothing goes to waste.
  • Use a spatula to spread the batter evenly across the pan, smoothing the top so it bakes uniformly and looks neat.
  • Place the loaf pan into the preheated oven and bake for 35–40 minutes. The top should turn golden brown, and the bread should feel firm when gently pressed.
  • To check if it’s done, insert a toothpick into the center—if it comes out clean or with just a few crumbs, the bread is ready.
