Ingredients
  

  • Chicken breasts: 4 medium
  • Yellow onions: 2 large
  • Butter: 2 tbsp
  • Beef broth: 1 cup
  • Garlic: 2 cloves
  • Mozzarella cheese: 1 ½ cups
  • Parmesan cheese: ¼ cup
  • Salt pepper, thyme, paprika

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Slice onions thinly. Heat butter in a skillet and caramelize onions over medium heat, stirring occasionally for 20 minutes. Add garlic and cook for 1 minute.
  • Season chicken breasts with salt, pepper, paprika, and thyme.
  • Sear chicken in the same skillet for 2-3 minutes per side. Remove and set aside.
  • Deglaze the skillet with beef broth, scraping the bottom for flavor.
  • Place chicken back in the skillet. Top with onions, mozzarella, and Parmesan.
  • Bake for 20-25 minutes until chicken is cooked through and cheese is bubbly.
  • Let rest for 5 minutes before serving.
