- Chicken breasts: 4 medium
- Yellow onions: 2 large
- Butter: 2 tbsp
- Beef broth: 1 cup
- Garlic: 2 cloves
- Mozzarella cheese: 1 ½ cups
- Parmesan cheese: ¼ cup
- Salt pepper, thyme, paprika
Preheat oven to 375°F (190°C).
Slice onions thinly. Heat butter in a skillet and caramelize onions over medium heat, stirring occasionally for 20 minutes. Add garlic and cook for 1 minute.
Season chicken breasts with salt, pepper, paprika, and thyme.
Sear chicken in the same skillet for 2-3 minutes per side. Remove and set aside.
Deglaze the skillet with beef broth, scraping the bottom for flavor.
Place chicken back in the skillet. Top with onions, mozzarella, and Parmesan.
Bake for 20-25 minutes until chicken is cooked through and cheese is bubbly.
