Ingredients
  

  • Yellow Onions 4 large
  • Butter 3 tablespoons
  • Beef Broth 4 cups
  • Garlic 2 cloves, minced
  • Thyme 1 teaspoon dried
  • Bay Leaf 1
  • Salt and Pepper to taste
  • Swiss Cheese 1 cup, grated
  • Parmesan Cheese 1/4 cup, grated

Instructions
 

  • Slice the onions thinly.
  • Heat butter in a large pot over medium heat and add the onions. Cook for 30-40 minutes, stirring occasionally, until caramelized.
  • Add the minced garlic, thyme, and bay leaf, and cook for 2 more minutes.
  • Add the beef broth and bring to a simmer. Let simmer for 15-20 minutes, seasoning with salt and pepper.
  • Grate the Swiss and Parmesan cheeses.
  • Ladle the soup into oven-safe bowls, top with cheese, and broil for 3-5 minutes until the cheese is bubbly.
