- 1 ½ cups almond flour
- 1 ½ cups shredded mozzarella cheese
- 2 oz cream cheese, softened
- 1 tsp baking powder
- 1 tsp garlic powder
- 2 large eggs
- 4 tbsp butter, melted
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- Salt and pepper to taste
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the almond flour, shredded mozzarella cheese, cream cheese, baking powder, and garlic powder. Stir until well combined.
Add the eggs and melted butter to the mixture and stir until the dough comes together. If the dough is too sticky, add a bit more almond flour to reach a dough-like consistency.
Scoop out small portions of dough and roll them into bite-sized balls. Place them on the prepared baking sheet, spacing them out evenly.
Bake in the preheated oven for 15-20 minutes, or until golden brown on top and firm to the touch.
While the bites are baking, melt the remaining butter in a small saucepan. Stir in the minced garlic and Italian herbs, and cook for 1-2 minutes until fragrant
Once the garlic bread bites are done baking, remove them from the oven and brush them with the garlic butter mixture, ensuring each bite is fully coated.
