- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper
- 2 cups shredded cabbage
- 1/4 cup shredded carrots optional
- 3 tbsp mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp mustard
Combine oil, garlic powder, paprika, salt, and pepper in a bowl.
Toss chicken thighs in marinade. Let rest 15–30 minutes.
Heat grill to medium-high.
Grill chicken 5–7 minutes per side or until cooked through.
In a new bowl, mix cabbage, carrots, mayo, vinegar, mustard, salt, and pepper.
Serve chicken with slaw or over a slaw bed.
