Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper
  • 2 cups shredded cabbage
  • 1/4 cup shredded carrots optional
  • 3 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard

Instructions
 

  • Combine oil, garlic powder, paprika, salt, and pepper in a bowl.
  • Toss chicken thighs in marinade. Let rest 15–30 minutes.
  • Heat grill to medium-high.
  • Grill chicken 5–7 minutes per side or until cooked through.
  • In a new bowl, mix cabbage, carrots, mayo, vinegar, mustard, salt, and pepper.
  • Serve chicken with slaw or over a slaw bed.
