- 2 cups almond flour
- 1/4 cup unsweetened butter
- 1/4 cup erythritol or monk fruit sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- Sugar-free sprinkles optional
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, beat softened butter, egg, and vanilla extract until smooth.
In another bowl, whisk together almond flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
Roll the dough out between two sheets of parchment paper to about 1/4-inch thickness.
Cut out the cookies using Halloween-themed cookie cutters.
Place the cookies on the baking sheet and bake for 10-12 minutes until the edges turn golden brown.
Remove from the oven and cool on a wire rack.
