Ingredients
  

  • Almond flour – 1 cup
  • Mozzarella – 1/2 cup
  • Olive oil – 1 tbsp
  • Herbs – 1 tsp
  • Salt – 1/2 tsp
  • Water – as needed

  • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper. This helps prevent sticking and ensures the crackers bake evenly and crisp up nicely.
  • In a mixing bowl, add the almond flour, shredded mozzarella cheese, dried herbs, salt, and olive oil. Use a spoon or your hands to mix everything together until the ingredients are evenly combined.
  • Continue mixing until the cheese and flour start to bind together. The mixture should begin to resemble a slightly crumbly dough.
  • Add water gradually, one tablespoon at a time, mixing after each addition until a soft dough forms. The dough should hold together easily without being too sticky.
  • Place the dough between two sheets of parchment paper. This prevents sticking and makes it much easier to roll out evenly.
  • Using a rolling pin, roll the dough out as thin as possible—this is key for achieving crispy crackers. Aim for an even thickness across the entire sheet.
  • Carefully peel off the top layer of parchment paper once the dough is rolled out.
  • Use a knife, pizza cutter, or cookie cutter to cut the dough into your desired cracker shapes. Try to keep them uniform in size so they bake evenly.
  • Transfer the parchment with the cut dough directly onto your baking sheet if it isn’t already there.
  • Place the tray in the preheated oven and bake for 10–15 minutes, or until the crackers turn golden brown and crisp around the edges. Keep an eye on them toward the end to prevent over-browning.
  • Remove the baking sheet from the oven and let the crackers cool completely on the tray. This step is important because they continue to firm up and become crisp as they cool.
  • Once fully cooled, break apart any pieces if needed and serve immediately or store in an airtight container to keep them crispy.
