Ingredients
  

  • Almond flour: 1 ½ cups
  • Butter: ¼ cup
  • Erythritol: 2 tablespoons crust & ¼ cup (filling)
  • Cream cheese: 8 ounces
  • Heavy cream: ½ cup
  • Lime juice: ¼ cup
  • Lime zest: 1 teaspoon
  • Gelatin: 1 tablespoon

Instructions
 

  • In a food processor, combine almond flour, melted butter, and erythritol. Press into a parchment-lined baking dish and chill.
  • Beat softened cream cheese until smooth. Add heavy cream, lime juice, lime zest, erythritol, and gelatin. Mix until fully combined.
  • Pour the lime filling over the crust and spread evenly.
  • Chill in the fridge for 3-4 hours or overnight.
  • Once set, remove from the pan using the parchment paper and slice into bars.
