Ingredients
  

  • Almond flour – 1 1/2 cups
  • Butter – 1/4 cup
  • Erythritol – 1/4 cup
  • Cream cheese – 8 oz
  • Heavy cream – 1/2 cup
  • Fresh lime juice – 1/4 cup
  • Lime zest – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Gelatin – 1 tablespoon

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine almond flour, butter, and erythritol. Mix well until crumbly.
  • Press the mixture into a pie dish and bake for 10-12 minutes or until golden brown. Let it cool.
  • Mix cream cheese, heavy cream, erythritol, lime juice, lime zest, and vanilla extract until smooth and fluffy.
  • Dissolve the gelatin in water, heat it, and then fold it into the filling.
  • Pour the filling into the cooled crust and smooth it out.
  • Chill the pie for at least 3 hours or overnight.
  • Slice and serve!
