- 1 lb ground chicken
- 1 egg
- 2 tbsp coconut flour
- 2 green onions
- 1 tsp garlic powder
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp keto brown sweetener
- 1 tbsp sesame oil
- 1 tsp chili paste
- 1/4 tsp xanthan gum
- 1/4 cup roasted peanuts
Mix ground chicken, egg, flour, green onions, garlic powder, salt & pepper in a bowl.
Form into 1-inch meatballs.
Brown meatballs in a skillet for 2–3 minutes per side.
Whisk sauce ingredients in a bowl.
Pour sauce into skillet, cover, and simmer 8–10 minutes.
Stir in peanuts, garnish with green onions, and serve.
