Ingredients
  

  • 1 lb ground beef
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup salsa (sugar-free)
  • 6 low-carb tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • Sour cream for serving (optional)

Instructions
 

  • Cook the ground beef with onion and bell pepper. Add spices and salsa.
  • Preheat the oven to 375°F. Layer beef, tortillas, and cheese in a baking dish.
  • Cover with foil and bake for 20 minutes, then bake uncovered for an additional 5-10 minutes.
