Ingredients
  

  • 1 cup heavy cream
  • 8 oz cream cheese
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest
  • 1/4 cup powdered erythritol
  • 1/2 tsp vanilla extract

Instructions
 

  • Zest and juice the lemon. Let the cream cheese soften at room temperature.
  • Whip the heavy cream in a cold bowl until stiff peaks form. Set aside.
  • Beat the softened cream cheese until smooth, then add lemon juice, zest, vanilla extract, and powdered erythritol. Mix well.
  • Fold the whipped cream gently into the cream cheese mixture until smooth and airy.
  • Spoon the mousse into serving glasses or bowls.
  • Refrigerate for at least 1 hour to set.
  • Garnish with extra lemon zest or fresh mint leaves, then serve.
