Ingredients
  

  • Cauliflower, 1 large head
  • Cheddar cheese, 1 cup
  • Sour cream, 1/2 cup
  • Cream cheese, 1/4 cup
  • Heavy cream, 1/4 cup
  • Bacon, 4 slices
  • Green onions, 2
  • Garlic powder, 1/2 tsp
  • Salt and pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Steam or boil cauliflower florets until tender but firm. Drain well.
  • Whisk sour cream, cream cheese, heavy cream, garlic powder, salt, and pepper in a bowl. Stir in 3/4 cup shredded cheddar cheese.
  • Place drained cauliflower in a greased baking dish and coat with the cheese mixture.
  • Top with remaining cheddar cheese and bake for 20-25 minutes or until bubbly and golden.
  • Sprinkle crumbled bacon and sliced green onions over the top. Serve warm.
