- 2 large eggs
- 1 cup avocado oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder optional
Add the eggs, apple cider vinegar, mustard, and salt to your blender or food processor.
Blend for about 10 seconds until everything is well combined.
Slowly add the avocado oil while the blender is running, in a thin stream.
Once all the oil is added, blend for 20-30 seconds until the mayo is thick and smooth.
Taste and adjust the seasoning if necessary.
Transfer to a jar and refrigerate.
