Ingredients
  

  • 2 medium zucchini approximately 400 g, grated
  • 1 cup finely ground almond flour
  • 3 large eggs
  • 1 cup shredded mozzarella
  • 1/2 cup crumbled feta
  • 1/3 cup grated Parmesan
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup chopped Kalamata olives
  • 2 tablespoons chopped sun-dried tomatoes
  • 2 tablespoons fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Wash and trim the zucchini, then grate it using the large holes of a box grater. Transfer the grated zucchini to a clean kitchen towel.
  • Gather the towel around the zucchini and squeeze firmly over the sink to remove as much excess moisture as possible. If the zucchini is especially watery, loosen it and squeeze it a second time. This step is essential for preventing soggy bread delights.
  • Finely chop the pitted Kalamata olives, sun-dried tomatoes, and fresh parsley. Set them aside while you prepare the batter.
  • In a large mixing bowl, whisk the three eggs with the olive oil until the eggs are evenly combined.
  • Add the thoroughly squeezed zucchini, shredded mozzarella, crumbled feta, and grated Parmesan to the egg mixture. Stir gently until the zucchini and cheeses are evenly distributed.
  • Add the almond flour, dried oregano, garlic powder, black pepper, salt, and optional red pepper flakes. Mix gently until the almond flour has been incorporated and no obvious dry pockets remain. Do not overmix.
  • Add the chopped Kalamata olives, sun-dried tomatoes, and parsley. Fold them gently through the mixture so the Mediterranean ingredients are evenly distributed throughout the batter.
  • Divide the mixture into approximately 10 equal portions on the parchment-lined baking sheet. Shape each portion into a small oval or rounded rectangle. Keep the portions similar in thickness so they bake evenly.
  • Bake for 22–28 minutes, or until the centers are set and the edges are golden brown. Begin checking around the 22-minute mark because baking time can vary depending on the moisture content of the zucchini and the thickness of each portion.
  • Remove the baking sheet from the oven and allow the bread delights to rest for approximately 5 minutes. The cheese will be very soft immediately after baking but will firm slightly as the bread cools.
  • Garnish with additional parsley, Parmesan, or freshly cracked black pepper if desired. Serve warm as an appetizer, snack, breakfast side, or accompaniment to grilled chicken, salads, and other keto-friendly meals.
