- Cauliflower Rice 4 cups
- Onion 1 small, diced
- Garlic 2 cloves, minced
- Bell Pepper 1 medium, diced
- Tomato Paste 2 tablespoons
- Chicken or Vegetable Broth 1/4 cup
- Spices: Cumin Chili Powder, Smoked Paprika, Salt, Black Pepper
- Fresh Cilantro 2 tablespoons
- Lime Juice 1 tablespoon
Heat a skillet with oil over medium heat.
Sauté onion and bell pepper for 3-4 minutes until softened.
Add garlic and cook for 1 minute.
Mix in tomato paste and spices, cooking for 1-2 minutes.
Stir in cauliflower rice and coat well.
