Ingredients
  

  • Cauliflower Rice 4 cups
  • Onion 1 small, diced
  • Garlic 2 cloves, minced
  • Bell Pepper 1 medium, diced
  • Tomato Paste 2 tablespoons
  • Chicken or Vegetable Broth 1/4 cup
  • Spices: Cumin Chili Powder, Smoked Paprika, Salt, Black Pepper
  • Fresh Cilantro 2 tablespoons
  • Lime Juice 1 tablespoon

Instructions
 

  • Heat a skillet with oil over medium heat.
  • Sauté onion and bell pepper for 3-4 minutes until softened.
  • Add garlic and cook for 1 minute.
  • Mix in tomato paste and spices, cooking for 1-2 minutes.
  • Stir in cauliflower rice and coat well.
  • Pour in broth and simmer for 5-7 minutes, stirring occasionally.
  • Remove from heat, stir in cilantro and lime juice, and serve hot.
