Ingredients
  

  • 2 lbs lamb cubed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1 tsp paprika
  • 1 can 14 oz chopped tomatoes
  • 4 cups beef or chicken broth
  • 1 zucchini chopped
  • Fresh cilantro for garnish

Instructions
 

  • Brown the lamb cubes in olive oil.
  • Sauté onions and garlic in the same pot.
  • Add the spices and toast for a minute.
  • Stir in tomatoes and broth, then add the lamb back in.
  • Simmer for 1-1.5 hours.
  • Add zucchini and simmer for an additional 20 minutes.
  • Garnish with cilantro and serve!
