- 2 lbs lamb cubed
- 2 tbsp olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 2 tsp cumin
- 1 tsp cinnamon
- 1 tsp coriander
- 1/2 tsp turmeric
- 1 tsp paprika
- 1 can 14 oz chopped tomatoes
- 4 cups beef or chicken broth
- 1 zucchini chopped
- Fresh cilantro for garnish
Brown the lamb cubes in olive oil.
Sauté onions and garlic in the same pot.
Add the spices and toast for a minute.
Stir in tomatoes and broth, then add the lamb back in.
Simmer for 1-1.5 hours.
Add zucchini and simmer for an additional 20 minutes.
Garnish with cilantro and serve!
