- 1 lb chicken thighs or breast, cut into bite-sized pieces
- 1/2 cup almond flour
- 2 large eggs whisked
- 2 tbsp coconut oil or avocado oil (for frying)
- 1 tbsp orange zest
- 1/4 cup soy sauce or coconut aminos
- 3 tbsp sugar-free sweetener (monk fruit or erythritol)
- 1 tsp garlic minced
- 1 tsp ginger grated
- 1/4 tsp xanthan gum
- 1/2 tsp red pepper flakes (optional)
Cut chicken into small pieces. Coat in whisked egg, then almond flour.
Fry chicken in oil until golden and crispy. Set aside.
Combine soy sauce, sweetener, orange zest, garlic, ginger, and red pepper flakes in a saucepan. Simmer until thickened with xanthan gum.
Toss chicken in sauce and serve immediately.
