Ingredients
  

  • 1 lb chicken thighs or breast, cut into bite-sized pieces
  • 1/2 cup almond flour
  • 2 large eggs whisked
  • 2 tbsp coconut oil or avocado oil (for frying)
  • 1 tbsp orange zest
  • 1/4 cup soy sauce or coconut aminos
  • 3 tbsp sugar-free sweetener (monk fruit or erythritol)
  • 1 tsp garlic minced
  • 1 tsp ginger grated
  • 1/4 tsp xanthan gum
  • 1/2 tsp red pepper flakes (optional)

Instructions
 

  • Cut chicken into small pieces. Coat in whisked egg, then almond flour.
  • Fry chicken in oil until golden and crispy. Set aside.
  • Combine soy sauce, sweetener, orange zest, garlic, ginger, and red pepper flakes in a saucepan. Simmer until thickened with xanthan gum.
  • Toss chicken in sauce and serve immediately.
