Ingredients
  

  • Almond Flour: 1 ½ cups
  • Cocoa Powder: ¼ cup
  • Butter: ½ cup
  • Sweetener Erythritol: ⅓ cup
  • Egg: 1 large
  • Cream Cheese: 8 oz
  • Heavy Cream: 2 tbsp
  • Vanilla Extract: 1 tsp

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix almond flour, cocoa powder, and sweetener in a bowl.
  • Add butter, vanilla, and egg. Stir until dough forms.
  • Roll out dough between two sheets of parchment paper and cut into cookie shapes.
  • Bake for 8-10 minutes, then cool on a wire rack.
  • Mix cream cheese, sweetener, and vanilla for filling.
  • Add heavy cream to the filling mixture and mix until fluffy.
  • Spread cream filling on one cookie and top with another.
  • Repeat until all cookies are assembled.
