- Almond Flour: 1 ½ cups
- Cocoa Powder: ¼ cup
- Butter: ½ cup
- Sweetener Erythritol: ⅓ cup
- Egg: 1 large
- Cream Cheese: 8 oz
- Heavy Cream: 2 tbsp
- Vanilla Extract: 1 tsp
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix almond flour, cocoa powder, and sweetener in a bowl.
Add butter, vanilla, and egg. Stir until dough forms.
Roll out dough between two sheets of parchment paper and cut into cookie shapes.
Bake for 8-10 minutes, then cool on a wire rack.
Mix cream cheese, sweetener, and vanilla for filling.
Add heavy cream to the filling mixture and mix until fluffy.
Spread cream filling on one cookie and top with another.
Repeat until all cookies are assembled.
