- 1/4 cup granulated erythritol (or preferred sweetener)
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg (optional)
- 1 tsp vanilla extract
- 1/4 tsp xanthan gum
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter (melted)
- 1 large egg
- 1/4 tsp vanilla extract
Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish.
In a mixing bowl, combine the sliced peaches, erythritol, cinnamon, nutmeg, vanilla extract, and xanthan gum. Toss to combine and spread evenly in the prepared baking dish
