Ingredients
  

  • Peanut Butter (1 cup)
  • Coconut Flour (1/4 cup)
  • Sweetener (1/4 cup)
  • Vanilla Extract (1 tsp)
  • Chia Seeds (Optional)
  • Optional Coatings (shredded coconut, nuts, cocoa powder)
  • Sugar-Free Chocolate Chips (Optional coating)

Instructions
 

  • In a mixing bowl, combine the peanut butter and sweetener until smooth.
  • Stir in the coconut flour and vanilla extract.
  • Roll the mixture into small bite-sized balls
  • Chill the balls in the fridge for at least 30 minutes.
  • (Optional) Melt sugar-free chocolate chips in the microwave or over a double boiler. Dip the chilled balls into the melted chocolate using a fork or skewer, then place them back on the parchment-lined sheet. Refrigerate until the chocolate hardens.
  • (Optional) Roll the balls in shredded coconut, chopped nuts, or cocoa powder for extra flavor.
