- Peanut Butter (1 cup)
- Coconut Flour (1/4 cup)
- Sweetener (1/4 cup)
- Vanilla Extract (1 tsp)
- Chia Seeds (Optional)
- Optional Coatings (shredded coconut, nuts, cocoa powder)
- Sugar-Free Chocolate Chips (Optional coating)
In a mixing bowl, combine the peanut butter and sweetener until smooth.
Stir in the coconut flour and vanilla extract.
Roll the mixture into small bite-sized balls
Chill the balls in the fridge for at least 30 minutes.
(Optional) Melt sugar-free chocolate chips in the microwave or over a double boiler. Dip the chilled balls into the melted chocolate using a fork or skewer, then place them back on the parchment-lined sheet. Refrigerate until the chocolate hardens.
