- 2 large low-carb tortillas about 8–10 inches each
- 4 ounces 113 g cream cheese, softened
- 1 cup about 4 ounces or 113 g shredded cheddar cheese
- ¼ cup 4 tablespoons sugar-free or very-low-carb pepper jelly
- ¼ teaspoon garlic powder optional
- Pinch of red pepper flakes optional
- 1 tablespoon chopped green onions optional
- Light cooking spray optional
Soften the cream cheese and stir in the optional garlic powder and red pepper flakes until smooth.
Warm the tortillas briefly if needed so they bend without cracking.
Divide the cream cheese between the tortillas and spread into a thin, even layer, leaving a small border around the edges.
Spread about 2 tablespoons of pepper jelly over each tortilla.
Divide the shredded cheddar between the tortillas. Add the optional green onions and press the filling gently into place.
Roll each tortilla tightly into a log, seal the seam, and refrigerate for 10–15 minutes if the logs feel too soft.
Cut each log into about eight slices, approximately ¾–1 inch thick.
Preheat the air fryer to 350°F (175°C) if your model recommends it. Arrange the pinwheels in a single layer, leaving room for air circulation.
Air-fry for 5–8 minutes, checking at 5 minutes, until the edges are lightly golden and the cheese has melted. Cook in batches as needed.
Rest for 1–2 minutes and serve warm.
